These no-bake bars are a delicious gooey honey treat. I recommend wrapping them individually with wax paper. This recipe is based on a granola bar we found at a mom and pop coffee shop while travelling.
You can make them gluten and dairy free by using gf oats, gf crispy rice, and dairy free chocolate chips.
This recipe makes approximately 14 bars.
1 1/2 cups Peanut Butter
1 teaspoon vanilla extract
1 cup raw or infused BLB honey
1/2 cup packed brown sugar
2 cups old fashioned oats
1 1/2 cups crispy rice cereal
1/4 cup chopped dried fruit
(raisins, craisins, dried apricots, dried cherries)
1/2 cup chopped nuts
1/2 cup mini chocolate chips
(Use Enjoy Life Brand for dairy free bars.)
Chop dried fruit and nuts.
Soften peanut butter in microwave.
Add vanilla, honey, and brown sugar to softened peanut butter.
Add oats and crispy rice. Stir until combined. (I used crystalized honey and had to mix with my hands, as it was really solid.)
Stir in chopped fruit, nuts, and chocolate chips.
Press into 9×13 greased pan and allow to cool.
Cut into bars and wrap with waxed paper.
